Peach-Orange Marmalade
- 7 peaches, with peel quartered and stoned
- 1 orange, cut up and seeds removed
- 13 cup maraschino cherry, drained
- granulated sugar, amount to equal pulp
- 12 teaspoon almond flavoring
- Put peaches, oranges and cherries through food grinder.
- Measure pulp and turn into large pot.
- Add same amount of sugar as there is pulp.
- Add almond flavouring.
- Heat and stir until sugar dissolves and it comes to a boil.
- Boil 30 to 40 minutes, stirring occasionally, until a small spoonful cooled on a chilled saucer jells.
- Pour into hot sterilized half pint jars to within 1/4 inch of the top.
- Place sterilized metal lids on jars and screw metal bands on securely.
- For added assurance against spoilage, you may choose to process in boiling water bath for 5 minutes.
