Quesadillas in Black Bean Sauce
- 1 can (15 oz.) black beans, undrained
- 4 corn tortillas (6 inch)
- 1 cup KRAFT Shredded Colby & Monterey Jack Cheeses
- 2 Tbsp. KRAFT Real Mayo Mayonnaise
- 1/4 cup chopped tomatoes Safeway 1 lb For $1.29 thru 02/09
- 1 Tbsp. chopped fresh cilantro
- Cook beans in large skillet on medium heat 4 min.
- or until heated through, stirring frequently.
- Mash beans lightly with fork.
- Top half of each tortilla with 1/4 cup cheese; fold in half.
- Add to bean mixture in skillet; cook on low heat 3 min.
- or until cheese is melted, turning quesadillas after 2 min.
- Serve topped with remaining ingredients.
