Old Style Spaghetti Sauce
- 3 kg fresh tomatoes
- 2 large onions
- 10 garlic cloves (minced)
- 2 tablespoons oregano
- 1 kg ground pork
- 1 tablespoon salt
- Place tomatoes in boiling water for 10 minutes.
- Allow to cool.
- Remove skin from tomatoes.
- put skinnless tomatoes in a large pot, and smash with a potato smasher, or food processor if your so lucky to have one.
- Finely chop onions and garlic, and add to the tomatoes.
- Brown the ground pork and drain excessive fat, add to large pot of sauce.
- Add seasoning, and bring to a boil.
- Reduce heat and simmer for 8 hours, stirring occasionally, (do not cover, you want the liquid to evaporate).
- Note: I like meatballs instead of ground pork, but that's your choice.
- Can be served on spaghetti pasta or can be used to make delicious meatball sandwiches.
- Add mozzarella or par mason cheese.
