Sunrise Bicuits
- 2 3/4 cup gluten-free all purpose flour (or 2 cups regular flour)
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp xanthum gum ( if using regular flour, you don't need this ingredient)
- 1/2 tsp salt
- 1/3 cup butter
- 1 cup buttermilk (if don't have Buttermilk or need a dairy free option, put 1 tbsp vinegar or lemon juice in 1 cup measuring cup & add enough milk of your choice to make 1 cup, stir, & let set for 5 min, then it's ready to use. may have to stir after sitting)
- 1 egg white, lightly beaten
- 1 tbsp water
- Preheat oven to 450F.
- Spray nonstick baking sheet with cooking spray.
- Set aside.
- In large bowl, mix together 2 cups flour, baking powder, baking soda, salt, & xanthum gum.
- Add butter & mix until coarse crumbs form.
- Stir in buttermilk until a soft dough forms.
- For gluten-free, you may have to add up to another 3/4 cups of flour to reach desired consistency depending on the flour.
- Drop spoonfuls of dough onto baking sheet.
- You can roll them out & use a cookie cutter the make round ones if you want, but I prefer not to, since it is less messy & easier to just drop spoonfuls on cookie sheets.
- Combine egg whites & water.
- Brush over tops of biscuits.
- Bake until golden, about 12-15 minutes.
