Sunrise Bicuits

  1. Preheat oven to 450F.
  2. Spray nonstick baking sheet with cooking spray.
  3. Set aside.
  4. In large bowl, mix together 2 cups flour, baking powder, baking soda, salt, & xanthum gum.
  5. Add butter & mix until coarse crumbs form.
  6. Stir in buttermilk until a soft dough forms.
  7. For gluten-free, you may have to add up to another 3/4 cups of flour to reach desired consistency depending on the flour.
  8. Drop spoonfuls of dough onto baking sheet.
  9. You can roll them out & use a cookie cutter the make round ones if you want, but I prefer not to, since it is less messy & easier to just drop spoonfuls on cookie sheets.
  10. Combine egg whites & water.
  11. Brush over tops of biscuits.
  12. Bake until golden, about 12-15 minutes.
