Green Pepper Jelly Recipe

  1. Seed peppers and chop coarsely.
  2. Place half of peppers and 3/4 c. vinegar in blender and process on high till smooth.
  3. Repeat with remaining pepper and vinegar.
  4. Combine pureed peppers, red pepper, sugar and salt in a large Dutch oven.
  5. Bring to boil and add in pectin.
  6. Cook, stirring often, for 45 min or possibly till mix sheets from a metal spoon.
  7. Quickly pour jelly into sterilized jars, leaving 1/2 inch headspace.
  8. Cover with 1/8 inch layer of paraffin.
  9. Cover with metal lids and bands.
  10. Makes 6-7 half pints.
  11. Serve with cream cheese and crackers.
