Southwest Chicken And Rice
- 1 bag Success rice, cooked according to pkg. directions
- 2 1/2 to 3 lb. chicken pieces
- 2 tsp. vegetable oil
- 1/2 c. chopped onion
- 1/2 c. chopped green bell pepper
- 1/2 c. chopped red bell pepper
- 1 (15 oz.) can tomato sauce
- 1/4 c. water
- 1 Tbsp. chicken flavor instant bouillon
- 1 Tbsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. paprika
- 1/4 tsp. ground cumin
- Brown chicken in oil.
- Remove from skillet.
- Cook peppers and onion until tender and crisp.
- Stir in remaining ingredients and chicken.
- Bring to a boil.
- Reduce heat.
- Cover and simmer 30 minutes or until chicken is tender.
- Serve over rice.
