Chicken (or Pork!) Santa Fe Burritos

  2. Wrap tortillas tightly in foil and warm in a 250 degrees oven while preparing filling.

  4. Heat oil in a large skillet, and add onions.
  5. Cook until translucent.
  6. Add remaining ingredients, except tortillas and cheese, and simmer for 20 minutes, or until slightly thickened.
  7. Spread filling on warmed tortillas and top with a handful of cheese.
  8. Roll burrito style.
