Nif's Broccoli Rice Casserole (Vegetarian)

  1. Cook rice as listed on the package.
  2. You can also use broth to add more flavour.
  3. Do not overcook!
  4. Meanwhile, heat butter over low-medium heat in a frying pan.
  5. Add onions, celery and broccoli and saute until softened.
  6. You do not want to brown the veggies.
  7. Set oven to 350F and spray casserole dish with nonstick spray.
  8. Mix rice, sauteed veggies, black pepper, Cheez Whiz, canned soup and half the cheddar cheese.
  9. Pour into casserole dish.
  10. Sprinkle other half of cheddar on top of casserole and cover.
  11. Bake for 45 minutes.
  12. If you are using this for a potluck, wrap the casserole dish in a large towel and dish will stay warm for a couple of hours.
