Creamed Corn Muffins Recipe
- 1 c. flour
- 1 c. yellow cornmeal
- 1 tbsp. sugar
- 1 tbsp. baking pwdr
- 1 1/2 teaspoon salt
- 1 lg. egg, beaten lightly
- 1/2 c. lowfat milk
- 1/2 stick (1/4 c.) unsalted butter, melted
- 8 1/2 ounce. can cream-style corn
- Into a bowl sift together the flour, cornmeal, sugar, baking pwdr and salt.
- In another bowl combine the egg, lowfat milk, butter and corn.
- Add in egg mix to the flour mix; stir together lightly.
- Batter will be lumpy.
- Spoon batter into buttered 1/2 c. muffin tins, filling 7/8 full.
- Bake in middle of preheated warm oven (425 degrees) for 15-20 min.
- Makes 12.
