Creamed Corn Muffins Recipe

  1. Into a bowl sift together the flour, cornmeal, sugar, baking pwdr and salt.
  2. In another bowl combine the egg, lowfat milk, butter and corn.
  3. Add in egg mix to the flour mix; stir together lightly.
  4. Batter will be lumpy.
  5. Spoon batter into buttered 1/2 c. muffin tins, filling 7/8 full.
  6. Bake in middle of preheated warm oven (425 degrees) for 15-20 min.
  7. Makes 12.
