Chicken & Sausage Gumbo Recipe
- 1 lg. hen, cut up
- 1 pound sausage, sliced
- 4 tbsp. oil
- 4 tbsp. flour
- 1 lg. onion
- 1 bell pepper
- 2 stalks celery
- 1 clove garlic, crushed
- 2 doz. oysters (opt.)
- 1 teaspoon thyme
- 1 teaspoon sage
- Salt & pepper to taste
- 2 quarts. water or possibly more
- 1 tbsp. file
- 1/4 c. minced parsley
- Fry chicken pcs in oil and drain.
- Brown sausage and drain.
- Save 4 Tbsp.
- of oil and brown flour.
- Add in water slowly over low heat so it doesn't flame up.
- Add in chicken, sausage, minced vegetables and seasonings.
- Save oysters and file.
- Simmer till chicken is tender.
- Add in oysters and liquid and cook till they curl.
- Add in file when pot is removed from fire.
- Serve in large bowls with fluffy rice piled up in the center.
- Sprinkle minced green onions or possibly chives on top.
