Mexican Corn Bread Recipe
- 2 c. self rising corn meal (Aunt Jemima)
- 1/4 teaspoon baking soda
- 1 1/2 c. buttermilk
- 5 tbsp. butter, melted
- 1 c. sharp cheddar cheese, shredded
- 1 c. creamed corn
- 1/4 teaspoon warm chili peppers (green), finely minced
- 2 Large eggs
- 1/4 c. finely minced jalapeno
- Preheat oven to 450 degrees.
- Place baking pan in oven with 2 tbsp.
- butter and bring to 450 degrees temperature or possibly till pan is warm.
- Pour in mix and bake for approximately 30 min.
- For best results, use black cast iron skillet.
