Spaghetti with Sun-Dried Tomatoes and Broccoli
- 8 oz. spaghetti
- 1/2 cup sun-dried tomatoes
- 2 cups chopped broccoli
- 2-1/2 cup chopped tomatoes
- 2 tbsp. olive oil
- 1-1/2 tsp. crushed garlic
- 1 dash crushed dried chilis
- 1/2 cup chopped fresh basil
- 2 tsp. dried basil
- 3 tbsp. grated Parmesan cheese
- Cook pasta in boiling water according to package instructions or until firm to the bite.
- Drain and place in serving bowl.
- Pour boiling water over the sun-dried tomatoes.
- Let soak for 15 minutes.
- Drain, then chop.
- Add to pasta.
- Blanch broccoli in boiling water just until barely tender.
- Rinse with cold water, drain and add to pasta.
- Add tomatoes, oil, garlic, chilies, basil and cheese.
- Toss to combine.
