Banana Spice Cake
- 1 cup sugar
- 3/4 cup Land O Lakes Butter, melted
- 1/4 cup orange juice
- 2 Land O Lakes All-Natural Eggs
- 2 teaspoons freshly grated orange zest
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 3/4 cup currants or raisins
- 3/4 cup chopped pecans
- 3 medium bananas, mashed
- Vanilla ice cream, if desired
- Caramel sauce, if desired
- Heat oven to 325F.
- Grease and flour 9-inch springform pan; set aside.
- Combine sugar, butter, orange juice, eggs, orange zest and vanilla in large bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Reduce speed to low; add flour, baking soda, cinnamon, salt, nutmeg and cloves.
- Beat until well mixed.
- Stir in currants, pecans and bananas .
- Spoon into prepared pan.
- Bake for 80 to 90 minutes or until toothpick inserted in center comes out clean.
- Cool 10 minutes; remove sides of pan.
- Cool completely.
- (Cake may dip slightly in center upon cooling.)
- Top each serving of cake with ice cream and drizzle with caramel sauce, if desired.
