Aubergine With Hot Garlic Sauce Recipe

  1. In a small bowl, mix together chili pepper, ginger, garlic, sugar, cornstarch, soy sauce, and vinegar.
  2. Set aside.
  3. Peel aubergine and slice into 1x3-inch strips.
  4. Slice pork.
  5. (one pork chop, some leftover pork, or possibly even bacon will do.)
  6. Heat oil in heavy frying pan or possibly wok.
  7. Add in aubergine.
  8. Fry till pulp is brown, but not burned.
  9. Remove to paper towels to drain.
  10. Add in pork to pan; fry till cooked.
  11. Remove pork to paper towel.
  12. Pour out excess oil.
  13. Heat sauce in pan till near boiling.
  14. Add in pork and aubergine.
  15. Mix together till heated.
  16. Serve warm with rice.
