Aubergine With Hot Garlic Sauce Recipe

- 1 tsp Chopped red chili pepper(or possibly
- 1/4 tsp Dry flakes or possibly to Taste)
- 1 tsp Chopped ginger root
- 1 tsp Chopped garlic
- 1 tsp Sugar
- 1 tsp Cornstarch
- 1 1/2 Tbsp. Soy sauce
- 1 tsp White vinegar
- 1/2 c. Pork(or possibly more) -- cut into Strips - leftover okay)
- 1/2 x To 3/4 lb aubergine -- peeled Sliced (1-inch strips)
- 1 c. Oil
- In a small bowl, mix together chili pepper, ginger, garlic, sugar, cornstarch, soy sauce, and vinegar.
- Set aside.
- Peel aubergine and slice into 1x3-inch strips.
- Slice pork.
- (one pork chop, some leftover pork, or possibly even bacon will do.)
- Heat oil in heavy frying pan or possibly wok.
- Add in aubergine.
- Fry till pulp is brown, but not burned.
- Remove to paper towels to drain.
- Add in pork to pan; fry till cooked.
- Remove pork to paper towel.
- Pour out excess oil.
- Heat sauce in pan till near boiling.
- Add in pork and aubergine.
- Mix together till heated.
- Serve warm with rice.
