Baked Stuffed Haddock Recipe
- 15 x haddock filets - (6 ounce ea)
- 1 lb crab (lump crabmeat)
- 1/2 c. minced celery
- 1/2 c. minced onion
- 2 1/2 Tbsp. minced parsley
- 1 Tbsp. Old Bay seasoning
- 2 c. regular bread crumbs
- 2 whl Large eggs
- 1/2 c. mayonnaise
- 2 Tbsp. Worcestershire sauce
- 1 Tbsp. Dijon mustard
- 2 Tbsp. minced shallots
- 1 pch flour
- 1/2 c. dry white wine
- 1/2 lb soft butter
- Mix all the ingredients of the stuffing together.
- Portion into 2 ounces and roll up in the haddock filets.
- Place in buttered casserole dish.
- Drizzle with white wine.
- Bake at 400 degrees for 15 min.
- For the Sauce: First saute/fry the shallots.
- Add in the healthy pinch of flour and the wine.
- Reduce by half.
- Gradually add in the butter, whisking constantly.
- Strain and pour over the haddock after it is baked.
- This recipe yields 15 servings.
