Coffee Crumb Cake
- 2/3 cup white sugar with dash of brown sugar
- 1 1/4 cup flour
- 1 1/2 tsp cinnamon
- 7 tbsp melted butter
- 1 few drops vanilla
- 1/2 lb butter softened
- 1 1/4 cup white sugar
- 1/4 cup brown sugar
- 3 eggs
- 3 cup self rising flour(spooned into measuring cups)
- 1 cup milk
- 1 tbsp vanilla
- 1/2 tsp cinnamon
- preheat oven 350 grease 13x9 pan
- for crumb: melt butter, cool slightly.
- add dry ingredients then vanilla while stirring and pushing around with fork
- refrigerate crumb topping
- cream butter then add sugars and cream well
- add eggs one at time beating each time and until light and fluffy
- alternate between flour and milk.
- mixing well between each add.
- hint: I add the vanilla for to the milk for cake batter
- hint: this batter will be thick when pouring into pan
- add crumb topping before baking.
- bake for 50 min until brown
- sprinkle with powdered sugar after cooled
