Oatmeal Drop Cookies
- 3/4 c. stirred all-purpose flour
- 1/2 tsp. cinnamon
- 1 1/2 c. quick cooking oats
- 1 large egg
- 1 tsp. vanilla
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. firmly packed light brown sugar
- 1/3 c. corn oil
- 1 Tbsp. water
- 1/2 c. raisins or nuts
- In a medium bowl with a wooden spoon, stir together the flour, baking powder, salt and cinnamon.
- Add brown sugar with the back of spoon.
- Stir until all lumps are tiny.
- Stir in oats.
- Make a well in the center.
- Add corn oil, unbeaten eggs, water, vanilla and raisins.
- Stir vigorously until the dry ingredients are moistened.
- Drop by level tablespoons 2 inches apart onto greased cookie sheet.
- Bake in preheated 350u0b0 oven until lightly browned, about 13 to 15 minutes.
- With a wide spatula, remove at once to wire racks to cool.
- Makes about 2 1/2 dozen.
- Recipe may be doubled.
