Lemon-Coconut Squares

  1. Heat oven to 350F.
  2. Mix wafer crumbs, 1/4 cup sugar, butter and lemon zest until blended; press onto bottom of 8-inch square pan.
  3. Bake 8 min.
  4. Beat eggs and remaining sugar in small bowl with whisk until well blended and thickened.
  5. Add lemon juice, flour and baking powder; mix well.
  6. Pour over crust; sprinkle with coconut.
  7. Bake 25 to 30 min.
  8. or until center is set and top is lightly browned.
  9. Cool completely.
  10. Refrigerate several hours or until chilled before cutting to serve.
