Gooey Garlic Cheese Bread

  1. Preheat the oven to 450 F. Line a baking sheet with foil.
  2. Split the baguette in half crosswise, then lengthwise, to make 4 pieces.
  3. Rub the entire surface of each piece of bread with the garlic.
  4. Place the bread, cut side up, on the prepared baking sheet and bake until the bread begins to brown, about 8 minutes.
  5. Remove the bread from the oven.
  6. Turn the broiler on high.
  7. Pour the chicken broth into a small bowl, and dunk each piece of bread in the broth, allowing it to absorb a good amount of liquid.
  8. Place the soaked pieces of baguette back on the baking sheet, cut side up.
  9. Season them with salt and crushed red pepper to taste.
  10. Sprinkle with the Parmigiano-Reggiano and mozzarella.
  11. Broil the bread until the cheese is bubbly and beginning to brown, about 3 minutes.
  12. Sprinkle the parsley over the bread, cut each piece in half, and serve.
