Melt in your mouth croc pot roast
- 2 lb chuck roast
- 1 large onion
- 2 each celery
- 3 each carrots
- 10 clove garlic
- 3 each potatoes
- 4 sprigs of thyme
- 2 sprigs of Rosemary
- 5 oregano leaves
- 2 tbsp olive oil
- 1 garlic ,onion powder tt
- 1 salt and pepper tt
- 1 tbsp cracked pepper
- 1/2 gallon stock and or water
- preheat oven on highest heat possible
- season the roast with salt and cracked pepper on all sides
- in a lg skillet heat oil on high heat and sear the roast until dark brown on all sides
- place roast in oven for 15 minutes.
- meanwhile cut carrots, celery, onion coarsely and crush garlic
- place roast and veggies in a croc pot.
- including thyme, Rosemary and oregano
- fill with stock and or water to the top
- turn the croc pot on high for 6 hours
- when roast falls apart it's done
- season with salt, pepper, garlic and onion powder depending on your taste
- **if the liquid over reduces fill to cover the roast unless it's an hour away from being done**
