Melt in your mouth croc pot roast

  1. preheat oven on highest heat possible
  2. season the roast with salt and cracked pepper on all sides
  3. in a lg skillet heat oil on high heat and sear the roast until dark brown on all sides
  4. place roast in oven for 15 minutes.
  5. meanwhile cut carrots, celery, onion coarsely and crush garlic
  6. place roast and veggies in a croc pot.
  7. including thyme, Rosemary and oregano
  8. fill with stock and or water to the top
  9. turn the croc pot on high for 6 hours
  10. when roast falls apart it's done
  11. season with salt, pepper, garlic and onion powder depending on your taste
  12. **if the liquid over reduces fill to cover the roast unless it's an hour away from being done**
