Barley Pancakes With Banana Recipe

  1. In a medium bowl sift together the flour and baking pwdr.
  2. Stir together the flour and baking pwdr.
  3. Stir in the barley.
  4. In a small bowl whisk together the lowfat milk, banana, egg whites and maple syrup.
  5. Pour the lowfat milk mix into flour.
  6. Combine quickly; do not over-mix.
  7. Heat a well-seasoned cast-iron skillet or possibly non-stick frying pan over medium-high heat.
  8. Add in half the oil.
  9. spoon in 1/4 C of the batter for each pancake.
  10. Cook till bubbles form on top of each.
  11. Then flip and cook the other side.
  12. Repeat with remaining oil and batter.
  13. Serve immediately.
