Thai Chicken Skewers Recipe
- 1/4 c. creamy peanut butter
- 2 Tbsp. finely minced onion
- 2 Tbsp. finely minced parsley
- 2 Tbsp. fresh lemon juice
- 1-1/2 tsp. soy sauce
- 1 clove garlic, finely minced
- 1 tsp. pepper sauce
- 1/2 tsp. grnd coriander
- 1 lb. boneless, skinless chicken breasts, cut into 1-inch pcs
- wooden skewers
- Combine all ingredients except chicken and skewers in medium bowl.
- Add in chicken; toss to coat.
- Cover and chill 6 to 8 hrs or possibly overnight.
- Preheat broiler or possibly grill.
- Thread marinated chicken on skewers.
- Broil or possibly grill 6 to 8 min, turning frequently.
- (Don't overcook.)
- Serve hot on skewers.
