Chicken Fajita
- 1 chicken breast
- 1 to 2 tbsp. oil
- 1/2 onion, chopped
- 1/2 green pepper, chopped and seeded
- 1 pkg. fajita seasoning, mixed with water
- Salt and pepper, to taste
- 1 tortilla
- 1/4 cup shredded cheese
- 2 tbsp. sour cream
- 1/2 avocado, sliced
- 1/2 onion, chopped
- 1 tomato, chopped and drained
- 3 to 4 tbsp. chopped cilantro
- Place chicken breast in water and boil until chicken is fully cooked.
- Meanwhile, mix the chopped onion, tomato and cilantro in a small bowl and set aside.
- When chicken is finished, rinse with cold water.
- Once cool, shred or chop chicken into small pieces.
- Heat oil in a skillet or frying pan.
- First add onions, then green pepper, then shredded chicken.
- Sprinkle with salt and pepper, to taste.
- After frying for a few minutes, pour fajita seasoning over the mixture.
- Cook until chicken is fully saturated, then set aside.
- Cover tortilla with shredded cheese and heat in oven or non-oiled frying pan.
- Be careful not to burn.
- Spoon the chicken, green pepper and onion sauce over the fajita, then the fresh salsa.
- Cover with slices of avocado and top with sour cream.
- Fold.
