Halloween Coffee Cupcakes

  1. Prepare cake mix as directed on package, substituting coffee for water.
  2. Spoon into paper-lined muffin pan, filling each cup 1/2 full.
  3. Bake as directed on package for cupcakes.
  4. Cool.
  5. Pour 1/2 cup coffee and milk into medium bowl.
  6. Add pudding mix.
  7. Beat with wire whisk 1 minute.
  8. Immediately stir in whipped topping.
  9. Spread on cupcakes.
  10. Refrigerate until ready to serve.
  11. Garnish with chocolate sprinkles and candy coffee beans.
  12. Store leftover cupcakes in refrigerator.
