Ginger-Citrus Shrimp and Rice

  1. Heat butter in large skillet over medium heat; add garlic.
  2. Cook and stir 30 to 60 seconds until softened slightly.
  3. Add orange juice, scallions and ginger.
  4. Increase heat to medium-high; cook and stir about 3 minutes or until about 1/2 of the orange juice has evaporated.
  5. Add shrimp to skillet.
  6. Cook 2 to 3 minutes longer or just until shrimp are cooked through and turn pink.
  7. Stir in almonds.
  8. Add rice.
  9. Toss gently until ingredients are well mixed and rice is heated through.
  10. Season with salt and pepper.
