Ginger-Citrus Shrimp and Rice
- 1-1/2 tsp. butter or margarine
- 1/2 tsp. finely chopped garlic
- 1/4 cup orange juice
- 2 Tbsp. chopped scallions (green onions)
- 1 tsp. ground ginger
- 1/2 lb. large shrimp, peeled and deveined * Safeway 1 lb For $8.99 thru 02/09
- 1/4 cup slivered almonds, toasted
- 2 cups hot cooked MINUTE White Rice
- salt and pepper to taste
- Heat butter in large skillet over medium heat; add garlic.
- Cook and stir 30 to 60 seconds until softened slightly.
- Add orange juice, scallions and ginger.
- Increase heat to medium-high; cook and stir about 3 minutes or until about 1/2 of the orange juice has evaporated.
- Add shrimp to skillet.
- Cook 2 to 3 minutes longer or just until shrimp are cooked through and turn pink.
- Stir in almonds.
- Add rice.
- Toss gently until ingredients are well mixed and rice is heated through.
- Season with salt and pepper.
