Bacon Cheeseburger Meatloaf
- 3 lbs lean ground beef
- 1 lb cheddar cheese, medium
- 1 lb bacon, chopped
- 2 slices potato bread (or 1 cup bread crumbs and 1/2 cup potato flakes)
- 2 tablespoons mustard
- 2 eggs
- 1 onions, chopped or 1 (39 g) packet onion soup mix
- 12 cup salsa
- 15 ounces tomato sauce, divided
- 13 cup milk
- Preheat oven to 425.
- In a large mixing bowl, combine ground beef, bacon, onions and bread.
- Add eggs, milk, mustard, salsa, and half the tomato sauce.
- Mix well.
- Press into a greased 9x13 pan, leaving an indent lengthwise in the center.
- Quarter the block cheese, and arrange pieces to fit evenly in the indent.
- Pull the sides of the meatloaf up to completely cover the cheese.
- Pour the remaining tomato sauce evenly over the meatloaf.
- Bake 50-60 minutes, or until meat is no longer pink in the middle.
