Southwestern BBQ Grilled Chicken Pizza
- 24 boneless skinless chicken breasts
- 1-1/2 cups olive oil
- salt
- pepper
- 4 Tbsp. southwestern seasoning
- cornmeal
- 12 each Pizza Dough, 16 oz. balls
- 3 cups barbecue sauce
- 6 each yellow peppers, sliced round
- 3 cups red onions, grilled
- 28 each , sliced
- 3/4 cup fresh cilantro, chopped
- To prepare grilled chicken, combine olive oil, salt, pepper, and southwestern seasoning.
- Brush over chicken, grill, julienne and reserve for service.
- To assemble each pizza, dust pizza paddle with cornmeal and roll 16 oz.. dough into 12" diameter.
- Spread with 3 oz.
- BBQ sauce, 2 oz.
- yellow peppers, 1-1/2 oz.
- red onions, 8-1/2 oz.
- reserved chicken, 3-1/2 oz.
- mozzarella, 1 tablespoon cilantro.
- Bake at 500F for 7-8 minutes until golden brown.
- Cut each pizza into 8 slices.
- Yield: 12 Servings.
