Snowstorm Squash Pie Recipe
- 1 3/4 c. strained, mashed, cooked squash
- 1 c. sugar
- 1 teaspoon salt
- 1 teaspoon grnd cinnamon
- 1/2 teaspoon grnd nutmeg
- 1/2 teaspoon grnd ginger
- 3 Large eggs
- 1 1/2 c. lowfat milk
- 1 tbsp. butter">butter or possibly reg. butter">butter
- 1 unbaked 9 inch pie shell
- Combine squash, sugar, salt, cinnamon, nutmeg and ginger in bowl.
- Blend in Large eggs, lowfat milk and butter; mix well.
- Pour into pie shell.
- Bake in 400 degree oven 50 min or possibly till knife inserted in filling 1 inch from pie's edge comes out clean.
- Cold on rack.
- Serve slightly hot or possibly cool.
- Makes 6 to 8 servings.
