Pineapple, Olives and Artichoke Heart Pizza
- 1 pound pizza dough preferably whole wheat
- 1/2 cup pizza sauce homemade or store-bought, or tomato sauce, or marinara sauce
- 1 cup mozzarella cheese shredded and divided
- 1/2 cup pineapple cut into cubes, fresh or canned, drained
- 8 each kalamata olives pitted and sliced
- 1/4 cup artichoke hearts marinated, drained and sliced
- 2 each mushrooms button or cremini, sliced
- 1/4 cup sweet red bell peppers fresh or roasted, slice into strips
- 2 tablespoons pickled jalapenos sliced
- 2 cloves garlic sliced
- 1 x parsley leaves fresh, for serving, optional
- 1 x parsley leaves fresh, for serving, optional
- Preheat the oven to 475 degrees F.
- Divide the dough into 2 equal portions, shape into balls.
- Roll each ball out into a 12-inch round.
- Spoon 1/4 cup of pizza sauce over each pizza dough.
- Reserve 1/4 cup of cheese, sprinkle remaining cheese evenly over pizza sauce.
- Top with the topping ingredients randomly.
- Sprinkle the remaining cheese over.
- Bake the pizza in the oven for 12 to 15 minutes until the cheese melts and bubbles, and the crust becomes golden.
- Remove from the oven and let cool for a few minutes.
- Cut into the wedges and serve warm with fresh parley sprinkled on top if needed.
