Brown Rice And Broccoli Casserole
- 1 medium onion, chopped
- 3 cloves garlic, finely chopped
- 1 Tbsp. olive oil
- 1 1/2 c. cooked brown rice (quick cooking brown rice, optional)
- 1 1/4 c. spring water (if quick rice is used)
- 1/2 c. natural orange juice
- 1/4 c. sliced water chestnuts
- 3 Tbsp. tamari or low sodium soy sauce
- 2 c. broccoli florets
- 1 c. sliced mushrooms
- In a microwave-safe dish, combine onion, garlic and olive oil. Cook, uncovered, on High for 1 minute.
- Stir in rice (if uncooked rice is used, add water), orange juice, water chestnuts and tamari.
- Microwave, uncovered, on High for 5 minutes.
- Stir in broccoli and mushrooms.
- Cover and cook on High 4 to 5 minutes until liquid is absorbed.
