Spice-Crusted Skirt Steak

  1. Grind all spices (if using whole spices) in a spice grinder.
  2. Place steak, spices, and 1/2 tablespoon of oil in a zipper bag and rub to coat steak liberally.
  3. Place in refrigerator for 8 hours.
  4. Preheat oven to 350F.
  5. In a medium skillet over medium-high heat, add 1 tablespoon of oil.
  6. Add steak and sear for 3-5 minutes on each side or until darkened crust forms.
  7. When steak is seared, place skillet with steak (if using an oven-safe skillet) in 350F oven for 15-20 minutes or until desired doneness is reached.
  8. Is best served at medium doneness.
  9. Remove from oven and allow to rest for 10 minutes before slicing against the grain.
