Puerto Rican Stuffed plantains (Canoas)

  1. Put adobo on both sides of the ground meat.
  2. Heat up 2 tablespoons of olive oil and put the 2 cubes of sofrito to sautee.
  3. When its sauteed add the meat.
  4. When it starts browning add the olives and the tomato sauce.
  5. Add sazon goya and incorporate the flavors and at last add the fresh cilantro.
  6. In a baking pan add the plantains whole with a wide opening on the top.
  7. Rub the plantains with butter and cook for 30 minutes at 350F.
  8. When the plantains are done inside the opening add the meat and sprinkle the shredded mozzarella cheese and bake in broil for about 3 min until the cheese melts.
  9. Enjoy :)
