Puerto Rican Stuffed plantains (Canoas)
- 3 ripe plantains
- 3 cubes of sofrito
- 1 lb ground meat
- 1 bunch fresh cilantro
- 1 packages of sazon goya
- 1 adobo
- 1 can tomato sauce
- 12 Spanish olives
- 1 shredded mozzarella cheese
- Put adobo on both sides of the ground meat.
- Heat up 2 tablespoons of olive oil and put the 2 cubes of sofrito to sautee.
- When its sauteed add the meat.
- When it starts browning add the olives and the tomato sauce.
- Add sazon goya and incorporate the flavors and at last add the fresh cilantro.
- In a baking pan add the plantains whole with a wide opening on the top.
- Rub the plantains with butter and cook for 30 minutes at 350F.
- When the plantains are done inside the opening add the meat and sprinkle the shredded mozzarella cheese and bake in broil for about 3 min until the cheese melts.
