Turkey and Sun Dried Tomato Meatballs

  1. For the meatballs:
  2. In a large bowl, combine the ground turkey, bread crumbs, parmesan, pepper, parsley, sun dried tomatoes, and egg.
  3. Mix until just combined.
  4. Loosely roll into 1 1/2-inch balls.
  5. Place in a large baking dish, cover, and chill in the refrigerator to firm up for about an hour.
  6. Preheat the oven to 350 degrees (F).
  7. Once firm, dredge the meatballs in the flour.
  8. Heat the oil in a large skillet or pan on medium heat and brown the meatballs.
  9. Place the browned meatballs in a large baking dish.
  10. For the sauce:
  11. Leaving the skillet or pan on the stove, add the butter and oil.
  12. Whisk in the flour, combining well.
  13. Add the chicken stock and cook for 1 minute.
  14. Whisk in the the heavy cream.
  15. Add the tomato paste, sun dried tomatoes, salt and pepper.
  16. Whisk and cook for an additional 23 minutes, just enought so the sauce thickens a little.
  17. Adjust the seasonings to taste.
  18. Pour the sauce over the meatballs and bake in the oven for 30 minutes or until the meatballs are done.
  19. Enjoy!
