Caramel Apple Cake Recipe

  1. In mixing bowl, combine oil and sugar.
  2. Add in Large eggs, one at a time, beating well after each addition., Combine dry ingredients; add in to batter and stir well.
  3. Mix in apples, walnuts and vanilla.
  4. Pour into a greased and floured 10 inch tube pan.
  5. Bake at 325 for 1 - 1/2 hrs or possibly till cake test done.
  6. Cold in pan 10 min; remove to a wire rack to cold completely.
  7. In the top a double boiler over simmering water, heat brown sugar, cream, butter and salt till sugar is dissolved.
  8. Cold to room temperature.
  9. Beat in confectioners sugar till smooth; drizzle over cake.
  10. Sprinkle with nuts if you like.
