Apple Rose Tarts

  1. Line a baking sheet with parchment paper.
  2. Set aside.
  3. Cut apples in half and core.
  4. Slice apples as thinly as possible for easier rolling later.
  5. In a medium saucepan combine apple slices, apple juice and sugar.
  6. Cook apples for about 10 minutes until soft and pliable, not mushy.
  7. Drain the apples and allow to cool.
  8. Preheat oven to 350 .
  9. In a large mixing bowl, combine all custard ingredients and set aside.
  10. Once apples have cooled, take 3 or 4 apple slices and layer them on top of each other overlapping each one slightly.
  11. Gently roll the apples up and this will form your rose.
  12. Sit the apple rose into the tart shell tucking in the end of the last apple in the roll.
  13. Carefully take spoon and fill tarts with custard pouring on top through the rose.
  14. Sprinkle tops with turbanado or regular sugar.
  15. Bake for 8 to 10 minutes.
  16. Cool and enjoy!
