Lemongrass Meatballs
- 1/2 pounds Ground Beef
- 1/2 pounds Ground Pork
- 1 teaspoon Red Curry Paste
- 1/4 teaspoons Kosher Salt
- 1/2 cups Chopped Shallots
- 2 Tablespoons Minced Lemongrass
- 2 Tablespoons Minced Ginger
- 1/4 cups Cooked Jasmine Rice
- Vegetable Or Canola Oil For Frying
- 1/4 cups Lightly Packed Cilantro Leaves
- 1 Red Chili Pepper, Sliced
- Combine ground beef, ground pork, red curry paste, and salt in a large mixing bowl.
- In a food processor, combine shallots, lemongrass, ginger and garlic.
- Process until it becomes paste-like.
- Add rice and pulse several times.
- Add mixture to the ground meat mixture until well incorporated.
- Shape the mixture into golfball-sized rounds (about 16 balls) with your hands and spread rolled meatballs on a large clean surface, making sure that they do not touch.
- In a large skillet, heat 1/4 inch of oil over medium-high heat.
- Add meatballs and roll frequently until evenly browned, about 10 minutes.
- Transfer meatballs to paper-towel-lined platter or baking sheet to drain excess oil.
- Let it rest for a minute before transferring to bowls or a serving platter.
- Garnish with cilantro leaves and sliced red chili pepper.
