Lemongrass Meatballs

  1. Combine ground beef, ground pork, red curry paste, and salt in a large mixing bowl.
  2. In a food processor, combine shallots, lemongrass, ginger and garlic.
  3. Process until it becomes paste-like.
  4. Add rice and pulse several times.
  5. Add mixture to the ground meat mixture until well incorporated.
  6. Shape the mixture into golfball-sized rounds (about 16 balls) with your hands and spread rolled meatballs on a large clean surface, making sure that they do not touch.
  7. In a large skillet, heat 1/4 inch of oil over medium-high heat.
  8. Add meatballs and roll frequently until evenly browned, about 10 minutes.
  9. Transfer meatballs to paper-towel-lined platter or baking sheet to drain excess oil.
  10. Let it rest for a minute before transferring to bowls or a serving platter.
  11. Garnish with cilantro leaves and sliced red chili pepper.
