Apple Pecan Muffins Recipe
- 1 c. wheat bran flakes cereal with raisins
- 2/3 c. sugar
- 1/3 c. graham cracker crumbs
- 1 1/4 tsp baking soda
- 1/4 tsp salt
- 1 c. nonfat buttermilk
- 2 Tbsp. margarine melted
- 1 x egg
- 1 c. finely minced peeled Rome apple
- 1/3 c. minced pecans toasted
- 2 Tbsp. sugar
- 3/4 tsp grnd cinnamon
- 1 Tbsp. margarine melted Vegetable cooking spray
- 1 Tbsp. sugar
- 1 1/2 c. all-purpose flour
- Combine the first 6 ingredients in a bowl, and make a well in the center of mix.
- Combine buttermilk, melted margarine, and egg, and stir well.
- Add in to the flour mix, stirring just till moistened, and set aside.
- Combine apple and next 4 ingredients, stirring well; set aside.
- Spoon 2 Tbsp.
- of batter into each of 12 muffin c. coated with cooking spray.
- Divide apple mix proportionately among muffin c., and top apple mix with remaining batter, dividing proportionately.
- Sprinkle 1 Tbsp.
- sugar proportionately over muffins.
- Bake at 350 degrees for 25 min.
- Remove from pans immediately.
- Yield: 1 dozen (serving size: 1 muffin).
- NOTES : The second layer of batter doesn't totally cover the apple-nut mix in the center, but this gives the muffins a wonderful textured appearance after they're baked.
