Apple Pecan Muffins Recipe

  1. Combine the first 6 ingredients in a bowl, and make a well in the center of mix.
  2. Combine buttermilk, melted margarine, and egg, and stir well.
  3. Add in to the flour mix, stirring just till moistened, and set aside.
  4. Combine apple and next 4 ingredients, stirring well; set aside.
  5. Spoon 2 Tbsp.
  6. of batter into each of 12 muffin c. coated with cooking spray.
  7. Divide apple mix proportionately among muffin c., and top apple mix with remaining batter, dividing proportionately.
  8. Sprinkle 1 Tbsp.
  9. sugar proportionately over muffins.
  10. Bake at 350 degrees for 25 min.
  11. Remove from pans immediately.
  12. Yield: 1 dozen (serving size: 1 muffin).
  13. NOTES : The second layer of batter doesn't totally cover the apple-nut mix in the center, but this gives the muffins a wonderful textured appearance after they're baked.
