Breakfast on the Go Panini
- 4 slices Canadian bacon
- 2 teaspoons butter
- 2 eggs
- salt
- fresh ground black pepper
- 2 English muffins, split
- 1 tablespoon butter, melted
- 2 ounces cheddar cheese, sliced
- Preheat panini grill to high.
- Arrange bacon on bottom grill plate of panini grill, close the top plate and grill until crispy, 1-2 minutes.
- Remove and set aside; wipe grill plates clean.
- In a nonstick skillet, melt 2 t butter over medium heat.
- Crack eggs into the pan and cook until whites are set but yolks are still runny.
- Season with salt and pepper.
- Flip eggs with a rubber spatula and cook until yolks are set; remove from heat.
- Place muffins, cut side down on a work surface and brush crusts with melted butter.
- Turn muffins over and, on bottom half of each muffin, evenly layer with bacon, cheese, and egg.
- Cover with top halves and press gently to pack.
- Place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
- Serve immediately.
