Hash Browns

  1. Par boil potatos and the piece of sweet potato.
  2. They still need to be very firm though, so only par boil for a few minutes.
  3. Grate the potato & sweet potato.
  4. Microwave to soften the grated carrot and zucchini.
  5. Combine the vegetable mix and potato mix and add the mustard and salt & pepper.
  6. Beat the egg whites until stiff.
  7. Fold the egg whites into the mix and combine thoroughly.
  8. Shallow fry until cooked.
