Nopales con Bistek (Cactus with Beef)

  2. Chop stewed beef into smaller peices (about 1/4).
  3. In a pot, place stewed beef, beef boullion cube, bay leaf, and enough water to cover the meat.
  4. Boil meat until tender about 1-1/2 hours.
  5. Add water as needed, you want water covering meat at all times.

  7. Saute galic and onion in oil.
  8. After meat is tender, add onion, garlic, chile powder, oregano, nopales (make sure nopales are drained and rinsed) and tomato paste to meat and water.
  9. Mix cornstarch with 1/4 cup warm water, slowly add into meat mixture while stirring.
  10. Let simmer about 30 minutes, sauce should thicken.

  12. Serve with rice and tortillas or tostados.
