Herbed Chicken Meatloaf

  1. Preheat oven to 350.
  2. Saute vegetables in hot oil in a small skillet over med-high heat 5-7 minutes or until vegetables are tender.
  3. Stir together the ground chicken, next 8 ingredients, and sauteed vegetables in a big bowl just until combined.
  4. Place mixture in a lightly greased 9 x 5 inch loaf pan.
  5. Bake for 60-70 minutes or until a meat thermometer reads 165; let stand 10 minutes before slicing.
  6. Serve meatloaf slices in pita rounds with desired toppings.
