Herbed Chicken Meatloaf
- 12 cup frozen diced mixed vegetables (onion, red and green bell pepper, and celery)
- 1 teaspoon olive oil
- 2 lbs ground chicken
- 12 cup fine dry breadcrumb
- 13 cup light mayonnaise
- 2 large eggs, lightly beaten
- 2 tablespoons chopped fresh flat leaf parsley
- 2 teaspoons all purpose Greek seasoning
- 12 teaspoon lemon zest
- 14 teaspoon salt (to taste)
- 14 teaspoon fresh ground pepper
- pita bread round, split
- sliced cucumber
- sliced tomatoes
- crumbled feta cheese
- plain yogurt
- kalamata olive
- lettuce leaf
- Preheat oven to 350.
- Saute vegetables in hot oil in a small skillet over med-high heat 5-7 minutes or until vegetables are tender.
- Stir together the ground chicken, next 8 ingredients, and sauteed vegetables in a big bowl just until combined.
- Place mixture in a lightly greased 9 x 5 inch loaf pan.
- Bake for 60-70 minutes or until a meat thermometer reads 165; let stand 10 minutes before slicing.
- Serve meatloaf slices in pita rounds with desired toppings.
