A Light and Refreshing Cheesecake with Pancake Mix
- 100 grams Cream cheese
- 30 grams Sugar
- 100 grams Plain yogurt
- 1 tsp Lemon juice (optional)
- 50 grams Pancake mix
- Place the cream cheese into a container, cover with plastic wrap, and heat up in the microwave for about 50 seconds (at 500W) to soften it.
- Mix the cream cheese with an egg beater.
- Add sugar to the bowl and mix until smooth.
- Additionally, add in the yogurt and lemon juice, and mix together.
- Add pancake mix, and stir with a rubber spatula until the flour disappears.
- Pour the pudding into the paper molds (or aluminum cases), and fill 70% full with the batter.
- Bake in an oven preheated to 180C for 30~35 minutes until the surface has turned a light golden brown, and then it's done.
- I lightly coated the recipe photo with marmalade for shine.
- Make it cute by topping it with heavy cream and fruit.
