Greek Style Loin Roast Recipe

  1. Place pork loin in a large self-sealing bag.
  2. Combine extra virgin olive oil, lemon juice, oregano, salt, pepper and chopped garlic; pour over pork in bag.
  3. Seal bag and chill overnight.
  4. Remove pork from marinade, throw away marinade.
  5. Grill over indirect heat by placing pork over drip pan on grill.
  6. Insert meat thermometer.
  7. Cover grill and cook till meat thermometer reads 155 degrees, about 1-1 1/2 hrs.
  8. Let rest 10 min (internal temperature will rise slightly upon standing) before slicing thinly to serve.
  9. To serve, place thin slices of pork in pocket bread and top with yogurt and onion sauce.
  10. Yield 6-10 servings.
  11. Yogurt and Onion Sauce: Stir together well 2 c. plain yogurt, 1/2 of a thinly sliced green onion, 2 tsp.
  12. lemon juice, 1/8 tsp.
  13. grnd coriander and 1/8 tsp.
  14. grnd black pepper.
