Flavored Wood Ear Mushrooms For Tonkotsu Ramen

  1. Dissolve a pinch of sugar in water in a bowl, and rehydrate the wood ear mushrooms.
  2. Squeeze out the rehydrated mushrooms well, and finely julienne.
  3. Combine with the ingredients.
  4. Put the wood ear mushrooms and ingredients in a frying pan, and stir fry with ra-yu until there's no moisture left in the pan.
  5. Mix in the ground sesame seeds to finish.
  6. I used it on "Rich Tonkotsu Ramen."
