Spinach Salad With Egg Vinaigrette

  1. Heat egg and water to cover in small saucepan to boiling.
  2. Remove from heat; let stand covered 10 minutes.
  3. Meanwhile, trim large stems from spinach; rinse thoroughly and drain.
  4. Run cool water over egg, then peel.
  5. Rub salad bowl with garlic.
  6. Mash egg in bowl with fork.
  7. Add oil, vinegar, salt, and pepper; beat with fork to blend.
  8. Add spinach to vinaigrette and toss to coat.
