Puff Pancake (For Fruit)

  1. Preheat oven to 425F.
  2. Lightly oil a 9-inch casserole and place in the oven.
  3. Whisk together eggs, egg whites, milk, and vanilla.
  4. Add a dash of salt.
  5. Sprinkle flour over the mixture, and whisk to combine.
  6. Pour the batter into the hot casserole.
  7. Bake 15-20 minutes, until the top and edges are browned and beginning to crisp.
  8. While the puff is baking, clean fruit and slice or shred to a consistent size, convenient for eating.
  9. Remove from the oven, sprinkle with lemon juice and sugar, and fill with fruit.
  10. Serve immediately.
