Bibb Lettuce, Avocado, and Dried Cranberry Salad
- 12 cup olive oil
- 2 tablespoons white wine vinegar
- 2 tablespoons orange juice
- 1 tablespoon Dijon mustard
- 12 bibb lettuce
- 2 avocados, peeled, seeded, sliced
- 14 cup dried cranberries
- 4 ounces asiago cheese or 4 ounces parmesan cheese
- Whisk oil, vinegar, orange juice, and mustard in small bowl to blend.
- Season dressing with salt and pepper.
- Place 3 lettuce leaves on each of 4 plates.
- Arrange sliced avocados and cranberries atop lettuce.
- Using vegetable peeler, shave cheese and sprinkle atop each salad.
- Drizzle salads with dressing.
