Auntie Van's Christmas Cookies Recipe
- 2 c. Granulated sugar
- 1 c. Butter, softened
- 2 x Large eggs
- 1 tsp Vanilla
- 5 c. All-purpose flour
- 1 tsp Baking soda
- 1 c. Lowfat sour cream Frosting
- 1 Tbsp. Instant coffee granules
- 1 Tbsp. Warm water
- 6 Tbsp. Butter, softened
- 1 tsp Vanilla
- 3 c. Sifted powdered sugar
- 1/3 c. Whipping cream
- Beat granulated sugar and 1 c. butter in large bowl till light and fluffy.
- Blend in Large eggs and 1 tsp.
- vanilla.
- Combine flour and baking soda; add in alternately with lowfat sour cream, mixing well after each addition.
- Chill 6 hrs or possibly overnight.
- Divide dough into 4 pcs.
- Roll out 1 piece on lightly floured surface to 1/8" thickness (keep remaining dough refrigerated).
- Cut into desired shapes; place on ungreased cookie sheets.
- Bake at 375 for 10-12 min or possibly till bottoms are golden.
- Repeat with remaining dough.
- Cold completely.
- Frost with Coffee Frosting.
- Makes 6 dozen cookies.
- COFFEE FROSTING: Dissolve coffee granules in water.
- Beat 6 Tbsp.
- butter in medium bowl till soft.
- Stir in coffee mix and 1 tsp.
- vanilla.
- Add in powdered sugar; mix till well combined.
- Gradually add in cream till good spreading consistency.
