Stuffed Flank Steak
- 2 Tbsp. butter or margarine, divided
- 1/4 cup celery slices
- 1/4 cup chopped onion Safeway 3 lb For $2.99 thru 02/09
- 3/4 cup unseasoned croutons
- 1/4 cup KRAFT Grated Parmesan Cheese
- 2 Tbsp. water
- 1/4 tsp. dried basil leaves
- 1/2 lb. beef flank steak Safeway 1 lb For $5.99 thru 02/09
- 1 can (8 oz.) tomato sauce
- HEAT 1 tablespoon butter in medium skillet on medium-high heat.
- Add vegetables; cook and stir until tender-crisp.
- Mix croutons, cheese, water and basil leaves in bowl; gently stir in vegetables.
- Slice steak in half horizontally, leaving straight side unsliced.
- Open steak; spread with stuffing mixture.
- Roll up, jelly-roll fashion; tie securely with string.
- Brown steak in remaining butter in skillet; add tomato sauce.
- Cover.
- Cook on low heat 1-1/2 to 2 hours or until tender, basting occasionally.
- To serve, cut into slices; top with tomato sauce.
- Sprinkle with additional cheese, if desired.
