Stuffed Flank Steak

  1. HEAT 1 tablespoon butter in medium skillet on medium-high heat.
  2. Add vegetables; cook and stir until tender-crisp.
  3. Mix croutons, cheese, water and basil leaves in bowl; gently stir in vegetables.
  4. Slice steak in half horizontally, leaving straight side unsliced.
  5. Open steak; spread with stuffing mixture.
  6. Roll up, jelly-roll fashion; tie securely with string.
  7. Brown steak in remaining butter in skillet; add tomato sauce.
  8. Cover.
  9. Cook on low heat 1-1/2 to 2 hours or until tender, basting occasionally.
  10. To serve, cut into slices; top with tomato sauce.
  11. Sprinkle with additional cheese, if desired.
