Simmered Pork Belly - Surprisingly Easy
- 250 grams 1 block of pork belly
- 1 Scallion
- 1 Katakuriko
- 1 Vegetable oil
- 250 ml Water
- 2 tbsp Sake
- 1 1/2 ~2 Sugar
- 2 to 3 tablespoons Soy sauce
- 1 tsp Grated ginger
- 2 Boiled eggs
- Cut the white part of the scallion diagonally (Save the green part, since you'll use it later!)
- Cut the pork belly in 3 cm pieces, and coat with katakuriko.
- Put vegetable oil in a pan, add the pork, and brown on both sides.
- (About 5 minutes over low-medium heat.)
- Put the pork and the green part of the scallion in a pot, and add enough water to cover the pork.
- Cover with a lid and boil for 1 hour over low heat.
- Put the ingredients marked in a separate pot, and bring to a boil.
- Add the white part of the scallion and the pre-boiled pork.
- Cover with a drop lid/otoshibuta made of aluminum foil or parchment paper, and a lid.
- Simmer over low heat for 1 hour.
- After 30 minutes, add the boiled eggs, and turn over the pieces of pork.
- Check the seasoning occasionally while cooking, and adjust to your taste.
- When the meat and eggs have turned brown and the sauce has reduced, it's done!
- If you make it ahead of time and let it cool, the flavor is absorbed well.
- Reheat before serving.
